Hybrid sorrel during stooling stage has the best characteristics, such characteristics are worse at the budding stage due to increase in cellulose and decrease in protein. Content of ascorbic acid decreases by more than a half. Biomass increases significantly. The average daily increase at the stooling stage before blossoming makes 1.7 - 1.8 ton per day, starting from the third year amounts 2.9 - 3.0.
